- 8 pieces thick, sturdy Spinach & Leek Daily Kneads Bread
- 1 1/2 tablespoons olive oil
- 1 sliced shallot (onion is fine)
- 6-8 oz sliced mushrooms of your choice
- 1 cup habanero peppers (or cherry tomatoes, if you're not a big fan of spicy)
- 2 cups chopped raw kale
- salt to taste
- 2 avocados
Add your olive oil to a pan and heat over medium. Add your sliced shallot or onion and saute them thoroughly, until translucent. Once translucent, add mushroom until they are lightly browned. Next, tomato and kale until the kale is wilted and warm all the way through. Remove from heat and spice/salt to taste.
Plug in/warm up your panini press. For a delicious avocado mash, simply add ripe avocado and fresh habanero peppers and smush together in a bowl. Spread using a knife on toasted pieces of Daily Kneads Spinach & Leek bread. Once spread on every piece of bread, add your heated veggies to the bread and stack your sandwich as high as possible!
Add the second piece of bread and carefully transport your sandwich to your preheated panini press. Once beautifully pressed (see photos for reference!), remove your sandwich and enjoy!
