Quick Quinoa Vegan Wraps

Ingredients:
- 1 Daily Kneads Sweet Beet Wrap
- 1/3 cup sliced red cabbage
- 1/2 sliced avocado
- ½ jalapeño sliced (optional)
- 2 tbsp diced red onion
- 1/3 cup of instant quinoa
- ¼ cup of cumin and chili spiced canned black beans
- 1/2 tbsp lime juice
- 2 tsp olive oil
- Salt and pepper to taste
Step 1:
Microwave your favorite Instant Quinoa according to package directions and set aside to cool. While the quinoa is cooling, peel and dice ¼ of your red onion and set aside.
Step 2:
Wash and slice ½ a jalapeño and slice ½ an avocado, set aside in a bowl for topping. Then, pour ¼ cup of cumin and chili spiced beans into a bowl and microwave for 30 seconds.
Step 3:
In a bowl, place your sliced red cabbage, quinoa, diced red onion, lime juice and olive oil. Mix and add salt and pepper to taste.
Step 4:
Lay your Daily Kneads Sweet Beet Wrap on a plate and spoon your cabbage, quinoa, and onion mixture onto the wrap. Add your warmed cumin and chili spiced beans and top with sliced avocado and jalapeños.
